So, the one fight I won against a hound. The gist of it seems to be that first you need to get the right pattern of script effect and rune in order for the writing to tell you what the hound sees. Unfortunately, that doesn't seem to always be the same, because after this fight the Mysterious/Humanoid combo didn't work next time. Once you get that, you need to cycle through the different script effects, and probably attack to see what defense the hound is using. Once you cycle all the way around, you can start hitting the hound with regular attacks.

I would guess that this will get mixed up per person and per reset most likely, but here's what I've seen.
If the hound's will is unbreakable, use Flowing Script.
If you're not fast enough to connect, use Blocky Script.
If you cannot contend with the hound's strength, use Angular Script.
If you cannot see a way through its defenses, use Mysterious Script.

All 4 of my script effects line up with Crypto's post above. This makes me wonder if perhaps there is more of an association with the four attributes than I initially saw? Somehow related to learning them in the first place?
So, it looks like the proper runes do get mixed up when you reset. Just managed to beat a hound again, and this time the pattern was:
